Lt. Col. Steven Camacho, Joint Culinary Center of Excellence director, speaks to the 28 Soldiers attending a safe food handling course Dec. 2-6 at the Holiday Inn Express, Chester. The Adjunct Instructor Certification Course was led by Franklin Booker, JCCoE’s chief reserve component food service advisor, with assistance from Chief Warrant Officer 4 Tollie Yoder, National Guard food service advisor. The participants came from units across the U.S. and were certified as safe food handling and protection trainers at the end of the week. “This is a significant activity that focuses on the Soldiers completing a basic Food Service Sanitation course and taking the information back to their formation where they will provide refresher training to their food service personnel,” noted Booker. The course featured presentations by Booker and Yoder on such subjects as Fundamentals of Food Safety, Managing Food Safety, Sanitary Controls, Field Food Safety and Protection, and others topics of importance. In addition, there were quizzes, homework assignments, group presentations by the attendees and individual presentations by the participants.
